The outstanding local cuisine offers chorizo cooked in cider, salt-cod omelette, fresh cod fried with peppers, char-grilled T-bone steaks, and for dessert such as walnuts and Idiazábal sheep's cheese. Discover Navarra’s Sal Dorada - golden salt - a commodity harvested by the Romans, held by the King of Navarra for his personal use, and still a priceless culinary delicacy. Admire the turquoise waters and charming waterfalls of Urederra Springs, cross the Urbasa mountain range from the monastery of Iranzu to the village Arbizu where they are said to make the best Txistorra - the local sausage in the region.
