Our journey begins with a gastronomic experience of show cooking in a private cooking club which dates back to the 1920’s. Here we to learn how to make and then enjoy traditional Navarran dishes.

We travel into medieval Navarra. We stroll a portion of the Saint James Way by Puente de la Reina and make a stop to admire the iconic eleventh century Romanesque bridge over the Arga River. We stop again for “almuerzo” (late morning snack) in the medieval village of Artajona, with its high defensive walls and towers. Our journey continues to the stunning church-fortress in Ujué, voted Navarra’s most beautiful village in 2018. At a restaurant tucked into the winding cobblestone roads, we can enjoy the delicious local specialty migas de pastor – “shepherd’s bread crumbs.” We go on to Olite to receive a private tour of the Olite castle, one of Spain’s more interesting castles, followed by a private wine tasting at the winery next door.

The Saint James Way is a twelfth century pilgrimage route the foundations of which are even more ancient Roman roadways. We travel to Puente de la Reina and on to the winery, Castillo de Monjardin, for a wine tasting experience. We journey southwest through vistas of seemingly endless vineyards and olive groves to the last town in Navarra on the pilgrimage route, Viana. Here we will have a late lunch in an asador (a grill house) where the chefs specialize in grilling everything over wood fires, giving you mouth-watering plates of red peppers, lamb chops, and massive T-bone steaks.

We travel northward through the Baztan Valley, which is considered by many to be the most beautiful region of the north. We pass through a magical thousand-year-old oak forest and through pastures where cattle and “latxa” sheep graze contentedly. The route takes us up a slowly rising, winding mountain pass that brings us to a truly idyllic landscape of green pastures, rolling hills, and picturesque white-washed Basque farm houses. From here we travel on to the town of San Esteban where we enjoy the salty hot springs spa and early dinner in a Michelin recommended country-style restaurant.

Our journey today takes us through charming Basque hamlets and villages to Aoiz, where Hemingway went each morning to take a dip in the Irati River. He described the water here as, “clear as light.” We follow his trail past the village of Aribe, where he would go to dream away the afternoons while trout fishing. We continue on into the lush foothills of the Pyrenees, travelling close to parts of the Saint James Way until we reach Burguete, where Hemingway stayed when he came to the area for relaxation. We visit the little hotel he slept in, and even visit his actual room, which the family has kept the same all these years. We sit down to an authentic Hemingway-style lunch in the dining hall where he would eat his meals. We visit the Roncesvalles Colegiata, where most pilgrims begin their St James Way walk in Spain.

Walking
You love to hike and are not afraid of a little sweat and some good uphills.
Our trip may include 12-15 km (7-10 miles) a day on various grades of terrain on a diversity of surfaces. Expect steeper climbs with phenomenal views and mountainscapes.
Biking
You love to bike at home regularly and can handle some sweat.
Our trip may include 40-60 km (25-40 miles) a day on rolling terrain with a few longer climbs rewarded with views and high points you will not want to miss.
Walking
You enjoy longer hikes with an incline or two and don’t mind pushing it a bit. Our trip may include around 6-12 km (4-8 miles) a day of walking on mostly flat terrain with a couple steeper but non-sustained climbs.
Biking
You ride your bike at home and are comfortable on a bike for a few hours. Our trip may include 40-60 km (25-40 miles) a day on mostly flat terrain and will include inclines and the occasional sustained climb.
Walking
You love to push yourself and can handle a longer hike with some sustained inclines and steep uphills. Our trip may include 10-15 km (6 -10 miles) on terrain that can be quite hilly and rolling with a few steeper climbs thrown in for good measure. The views will blow you away.
Biking
Test your mettle on off-the-beaten-paths that will stun and delight, along with legendary cycling routes in the north of Spain. You are an avid rider who loves to push themselves and enjoy the challenge of a big climb or sustained inclines. Our trip may include over 60-80 km (37 – 49 miles) a day in rolling hills with frequent climbs and even longer options available. You will be the master of your universe.
Walking
You like to go on walks at home but nothing that works up a sweat. Our trip may include around 5-10 km (3-6 miles) a day of walking on mostly flat terrain, with an occasional hill on well maintained trails or walkways.
Biking
You are in decent shape but don’t habitually ride a bike at home. Our trip may include 30-50 km (20-30 miles) a day on mostly flat terrain with a few small and achievable inclines.
